I love healthy snacks and one of my favorite on-the-go energy snack bars are GoMacro Bars. They are vegan, gluten-free, and taste great! I recently came across this date bar recipe that reminds me of the GoMacro Bars and it was surprising easy to make with just a few ingredients that I often have in my pantry.

WHAT ARE THE BENEFITS
Medjool dates have many benefits to them as they are filled with fiber, potassium, magnesium, folate, and vitamin K. In pregnancy and labor, dates help you to stay regular – because constipation is a real thing in pregnancy – regulates blood pressure, stimulates uterine contractions, reduces postpartum hemorrhage, and are a great source of energy to help you push through labor. Outside of pregnancy, dates are great for an afternoon pick-me up that combats tiredness, fatigue, and boosts your energy.
So, let’s get to it! A few items you will need is a food processor or a blender, wax paper or clear plastic wrap, and a baking spatula.
Here is how I made them:
DATE BARS
1/2 cup lightly salted roasted almonds or raw almonds
1/2 cup pistachio nuts
1 cup of chopped medjool dates
1 cup of chopped dried apricots
1/4 white chocolate chips (substitute with dark or milk chocolate chips if preferred)
Combine all of the ingredients in a food processor. Pulse a few times to break everything up, then blend continuously until the ingredients have broken down and start to clump together into a sticky brown ball.
Using a baking spatula scrape down the sides, turn out the mixture onto a piece of wax paper or plastic wrap. Press into an even square, then chill wrapped in the refrigerator for at least an hour. Cut into desired size of bars and store in the fridge until ready to eat.
